Bean’s Ultimate Raspberry Mojito

It’s hot tonight and I freaking LOVE IT!

I’m here sitting in my Vicky cut off shorts and I’ve got Snoh Aalegra’s “I Want You Around” on repeat (a song and gift from “Him”).

Friends, life is good this humid, sticky night. I’m off from job #2 – no running out of the house to sling boxes for menial pay. Most importantly – the DRANK! While I’m vibing tonight, my Raspberry Mojito is giving me all the feels.

The fact is, living in New York, the summer isn’t a season that stretches for months on end; unlike our super fortunate folks living in the South. We Northerners have to make the absolute most of the scant three months of tropical, balmy weather.

So when the weather finally breaks and summer is upon us, a Mojito is my drink of choice. Rum, lime, a splash of seltzer water, a Mojito is the ultimate in refreshment to navigate the dog days of summer. Plus, I’m growing mint and a Mojito infused summer is the perfect excuse to enjoy the mint growing fruits of my labor.

The Mojito really is a perfect drink for the summer. Mainly because it’s so refreshing and fruity. It’s also very easy to make and customize to your tastes.

For instance, I like my mojito drink strong and tart, so I use more alcohol and lime juice. I also use flavored rum; this is where the raspberry flavor comes from. An added bonus to using the flavored rum is that I don’t have to add sugar to my drink – the flavored rum has the sweetness covered.

Here is my recipe. Again, its NOT rocket science, it’s simply easy, summertime fun in a glass!

Bean’s Ultimate Raspberry Mojito

Prep Time 20 minutes
Course Drinks
Servings 1

Ingredients
  

  • 2 ounces Lime Juice
  • 1/2 Cup Bacardi Raspberry Flavored Rum
  • 1 tablespoon Schweppes Black Cherry Seltzer Water
  • 12 each Mint Leaves Reserve 5 leaves for garnish
  • 5 each Raspberries Garnish

Instructions
 

  • Juice enough limes to get 2 ounces of juice. Strain to remove lime pulp.
  • Take 7 mint leaves and tear into two or three pieces. Stir in with lime juice.
  • Combine mint and lime juice with Bacardi Rum.
  • Top off with seltzer water.
  • Add raspberries and 5 left over mints to garnish.
  • You can add ice if you'd like to chill things out.
